Here is the best Coconut Pie you will ever eat
COCONUT PIE (makes 2 pies)
2 cups sugar
2 cups coconut
¾ cup buttermilk
1 stick butter (soft)
2 teaspoon vanilla
5 eggs (room temperature)
Brown pie shells a little before using. Preheat oven to 400 degrees. Once oven temperature is reached—place pie shells in for around 7 or 8 minutes.
Make sure eggs are room temperature. Blend sugar and butter together. Mix in eggs and vanilla. Stir in buttermilk and coconut. Pour ingredients into pie shell.
Bake at 350 degrees for 30 – 35 minutes or until pie is firm and brown.
A former co-worker in Wilmington gave me her recipe. She sold these pies for years out of her kitchen. She gave me her recipe when Pam passed away. I made one for Bunky. Impressed the Hell out of her! I was proud as a Peacock!!
